Wild Turkeys

The company where I work is located at the edge of town in a fairly rural area.   We regularly get visited by a variety of different wildlife.  Today a flock of wild turkeys strolled right up to the building to graze on tasty dogwood berries from the tree at the entrance.  They were making happy clucking noises as they fed on the berries and were fairly unconcerned as I walked out the door and past them to take some pictures.

  2. - They're a lot leaner than domestic turkey so they have to be cooked carefully: really low heat with some pork fat slippoed under the skin to keep the meat moist. But overall, they're not bad. Oh yeah, and almost all dark meat because these birds use all their muscles, unlike barnyard birds.

  3. I only kind of like them. I find that because they're so active, the muscles are more defined an the meat seems stringy to me. Also, this is really the only time of year to eat them. What little fat they put on doesn't show up until Oct/Nov. When they are gearing up for winter. That being said - I might try to snag a few of the flock that inhabits our woods...
